Crema de yuca y maíz


  • 2 mazorcas de maíz
  • 2 tazas de yuca pelada y cortada en trozos
  • ½ cebolla blanca cortada en trozos
  • 4 dientes de ajo molido
  • 8 tazas de caldo de pollo
  • ¼ taza de crema de leche
  • 2 cucharadas de aceite de oliva
  • Sal y pimienta a gusto


  1. En una cacerola calienta el aceite de oliva y sofríe la cebolla y el ajo a fuego mediano.
  2. Con el cuchillo, retira los granos de maíz de la mazorca y agrégalos a la cacerola. Sofríe por 1 minuto.
  3. Agrega la yuca, el caldo y, para más sabor, agrega las mazorcas.
  4. Hierve la sopa aproximadamente de 15 a 18 minutos. Con un tenedor penetra los trozos de yuca sin ejercer presión.
  5. Cuando los vegetales estén tiernos, retira las mazorcas y procesa la sopa utilizando una licuadora de mano o una licuadora regular.
  6. Ya procesada, regresa la sopa a una cacerola y agrega la crema de leche.
  7. Prueba y ajusta el sabor, de ser necesario, con sal y pimienta.


Cuando retires los granos de maíz de la mazorca, no descartes la misma, añádesela a la sopa mientras cocina para obtener un sabor más intenso. Al momento de procesar la sopa en la licuadora, nunca lo hagas utilizando todo el líquido. Reserva un poco para ajustar la consistencia de la sopa a tu gusto.
